Slanted Door team opens Vietnamese noodle shop in Marin

Marin County is getting a new Vietnamese noodle restaurant from Charles Phan, the famed San Francisco chef best known for the slanted door.

Moonset Noodle Shop will land at 2405 Larkspur Landing Circle, the former Belcampo space of Larkspur’s Marin Country Mart. It rotates for an early to late summer or early fall.

The menu is still in the works, but expect a few street food-inspired small plates, several noodle options, and cocktails. It plans to offer beef, chicken, pork and vegetarian broth options, as well as different types of noodles.

Although Moonset aims to be laid back and family friendly, it is not a customizable noodle shop. (“God would hit me,” Phan said.) Instead, he envisions classics like mì hoành thánh, wonton noodle soup; bún bò Huế, a spicy beef noodle soup; and bún riêu, a noodle soup with a tomato-tinged broth flavored with shrimp paste. Bowls will arrive with heaps of herbs, shredded green cabbage and homemade condiments, like hoisin and sriracha.

“Warm broth with lots of herbs, lots of textures, lots of flavor,” Phan said. “Is there anything better?”

The 2,800 square foot space will accommodate approximately 100 people, including on the terrace. As Belcampo, the restaurant space seemed relatively comfortable considering the butchery component, but Phan’s team ripped out the tills, created a longer bar and added more tables.

Phan has long wanted to open a restaurant like Moonset. Back when he launched the first tilted door in the Mission district, he offered Vietnamese street food for lunch. With its fine dining experience, dining became an upscale affair and eventually became synonymous with the restaurant’s identity.

“I’ve always wanted to do this simpler way of eating where it’s almost the opposite of Slanted Door,” he said. “Street food has always been on my mind: it’s one of Vietnam’s great treasures.”

Phan also recently opened a sandwich shop, Chuck’s Takeaway, in the Mission District.
